Sweet Potato & Black Bean Burgers

I'm always on the look out for an amazing veggie burger recipe. This one has everything we love in it!

They were hearty, dense, stayed packed together and were delicious.

Ingredients:

1 can black beans , drained

2 medium sweet potatoes

1 cup brown rice, cooked

1 1/2 c whole oats

1/2 medium onion chopped

1 tsp cajun spice

1 tsp paprika

1 tsp cumin

 

Directions:

Cook sweet potatoes in oven at 400 degrees for 40 mins. They will still be a little firm (do not cook until mushy). Cool a little, and the skin should easily peel off. Cut into cubes. Place in med-large bowl.

Grind oats in food processor till they are a fine powder. Add beans, rice and onion. Pulse until chunky, not smooth. Add to bowl with potatoes.

Add spices and combine.

Make into burger patties.

They can be cooked in a skillet or they are firm enough to cook on the BBQ.

They can be frozen indiviually for future use also.
