Chai Tea Oatmeal
I would have never thought to add tea to oatmeal, but this combination is sweet, spicy and delicous.
I adapted this recipe from Clean Eating Magazine (Jan/Feb 2016)
2 chai tea bags
1 1/2 c. old fashioned rolled oats
2 bananas (one chopped for the oatmeal and one sliced for service)
1/2 c. coconut milk
2 tbsp unsweetened shredded coconut
1/4 c. unsweetened dried cherries
1. In a medium saucepan, bring 3 1/4 c. of water to a boil. Add teabags, cover, turn off heat and steep for 10 mins. Discard bags. Stir in oats, bananas and a dash of salt. Return to a rolling boil and reduce heat to med-low. Stir in milk and summer for 15 min, until oats are tender, stirring occasionally.
2. Meanwhile, heat a small skillet on med-high. Add shredded coconut and swirl it around for about 20 seconds until golden. Remove from heat; set aside.
3. Divide oatmeal among 4 - 500 ml jars or bowls. Top each with 1/4 of the banana slices, 1/2 tbsp coconut and 1 tbsp dried cherries.
4. Store jars in fridge for up to 5 days and reheat on medium, adding a splash of water to thin as desired. OR enjoy immediately.
