Chickpea & Veggie Soup

This soup is full of flavour, is hearty and vegan.



2 stalks celery, chopped

1 yellow onion, chopped

6 cloves garlic, minced

1 tsp each cumin and corriander

1/2 small head cabbage, chopped

1/8 tsp ground cayenne pepper

4-500ml cans chickpeas, drained & rinced

1 900ml carton veggie broth

4-6 c. water

2 tbsp lemon juice

salt and pepper to taste



Combine all ingredients into a crockpot and cook on LOW for 4 hours.  

Remove approx 4 cups of soup into a deep bowl. Using a submersable hand blender, blend until smooth. Add back to crockpot and stir.

Cook for an additional 2 hours.
