Chicken Chili
This is a recipe I created based on all my leftovers! Each Sunday I take an inventory of all our food in the fridge and cupboards and sometimes there is food that needs to be used so we don't waste!
Ingredients:
3-4 chicken breasts cooked and shredded (or cut into small
chunks)
1 can black beans
1 can white kidney beans
1 can kidney beans (all beans are low sodium)
1 can corn (no salt)
1 can diced tomatoes (low sodium)
1 small onion diced
2 carrots, peeled and diced
3 celery stalks diced
1 red or orange pepper, seeded and diced
1-3 c. water
2-3 tsp chili powder
2-3 tsp cumin
optional for serving:
shredded cheese
plain Greek yogurt
Directions:
Toss everything into a crockpot. Cook on low for 6-8 hours.
